In order to minimize the risk of health hazards from food, the law requires certain precautions to be taken and tests to be carried out.
The food company must set up a suitable procedure for this purpose.
Objective: The monitoring procedure set up is intended to identify, prevent, eliminate or reduce the risk of a health hazard to an acceptable level (HACCP concept).
These measures must be documented and must be kept for two years.
Seven HACCP principles with examples
Self-checks
- The various documentation lists should only be introduced where they are needed, for example:
- Must a goods receipt log only be kept where the goods are delivered and not procured by own purchasing.
- Cleaning lists must be drawn up for all rooms belonging to the business.
- Only staff who handle food or work in the kitchen must be trained in food hygiene.
- Pest control lists must be drawn up for the business in the case of storage and cooking kitchens. - These lists must be kept by the operators of all catering systems.
- A complete HACCP concept must be drawn up for the operation of a production kitchen. It is recommended that operators refer to guidelines that have been drawn up by hand and adapt them to the specific circumstances of the business.
- Further information can be obtained from the relevant associations, trade guilds and their food control authorities.
- Using the example of the various catering systems in a day care center, part of the monitoring system to be set up could be classified and formulated as follows:
- Incoming goods log
- Temperature check of the cooling/freezing equipment
- Proof of cleaning
- Pest control
- Staff training
- Checking the core temperature of heated food (at least plus 65 degrees Celsius)
These lists are the only way you can prove that you have acted in accordance with your obligations if necessary!
